Letters map to keys as on every modern phone: ABC on 2, DEF on 3, GHI on 4, JKL on 5, MNO on 6, PQRS on 7, TUV on 8 and WXYZ on 9. Digits, spaces and dashes in what you type are kept as they are, so 1-800-FLOWERS becomes 1-800-3569377.
In North America only the first seven digits after the area code are dialled, so extra letters at the end of a long vanity word (for example 1-800-CONTACTS) are simply ignored by the phone network.
